Kaancha Aam diye Murgi/ Chicken with raw mangoes: Recipe with Step by Step Pictures

The blistering heat, the sour pong of sweat, the blinding sun, Indian summer is all about getting roasted and toasted. But one thing that I love about summers, which I can never deny, is Kancha Aam. I have an unexplainable love for kancha aam. During childhood my favourite game after rushing back from school used to be aiming stones at branches blossoming with unripe mangoes. That was the sheer joy of enjoying summers and kancha aam makha used to be the quintessential afternoon snack.
So, even today, I make sure I have an inexhaustible stock of raw mangoes at my home; because, I love kancha aam in almost everything and aam chicken being one of my favourites.

This fiery, spicy, tangy and sweet recipe actually belongs to my Maa and it gives an immense pleasure even in this intolerable hot, sultry weather.

  • Onion, ginger, garlic and green chillies paste
  • Bay leaves
  • Dry chillies
  • Turmeric powder
  • Chilli Powder
  • Jeera powder
  • Sugar
  • Salt
  • Potatoes cut into cubes.

PROCEDURE:-

  • Sprinkle salt and mustard powder on the chicken pieces.
  • Heat oil in a pan and fry the chicken pieces till they turn golden brown. (This step is optional)
  • Take out the chicken pieces and dunk in the sliced onions into the oil. Fry for a while.
  • Add dry red chillies and bay leaves.
  • Now add red chilli powder, turmeric powder, jeera powder, sugar and salt. Fry the masala until oil separates.
  • Add raw mango paste and the onion-ginger-garlic-green chilli paste. Add a little water and stir for a while.
  • Now add the fried chicken and coat with the masala.
  • Add potatoes, pour boiling water and cover the pan with a lid. Let the whole dish cook properly. (Add the water depending on how you want your gravy to be, thick or thin)

You can try with whatever meat you like. Spicy, tangy and yummy, this recipe is my summer favorite. Try and let me know. :)
